About this deal

To make this whisky, the Bimber team sources malt whisky from Scotland (with a minimum age of 12 years) and blends it before finishing it in casks that previously contained its own much sought after single malt.

Production began in 2017 with spirit made using only local barley and Dartmoor spring water. This is then distilled through an old reconditioned alembic still from Cognac in France. Many people would consider English whisky to still be very much in its infancy – and as relative “newcomers” to the English whisky scene, we would tend to agree. However, the future of the industry is very bright. There has already been some high profile praise for what English whisky is doing in the industry, in terms of approach and quality. English distilleries are certainly not here to cut corners, they are here to put England right in the centre of the world of whisky, which for so many years has been dominated by Scotland, Ireland, the US, and more recently, Japan. The English Whisky Co released its first whisky in 2009, which makes it something of an old timer in England’s whisky revival. Based in the St George’s Distillery, Norfolk, they use locally sourced ingredients to produce a wide range of small batch releases.Dan Szor established the Cotswolds Distillery in 2014, the same year that they also started distilling their Cotswolds Single Malt using locally grown barley. The Cotswolds Distillery eventually launched the region’s first whisky in 2017 after aging it in previously filled American oak casks. The Norfolk Nog is a blend of the company’s award-winning English Single Malt and cream, resulting in a delicious and light creamy note. You can also taste the chocolate and coffee notes that build into citrusy and subtle herbal flavors after sitting the liquid in your mouth for a while. What’s An English Whisky? The production combined column and pot still whiskies aged in Sherry and bourbon barrels. The casks impart a more flavorful profile to the whisky. Only one release to date, the eight-month-old Rebellion, but definitely one to watch for future bottlings.

But English whisky isn’t aiming to out-do the Scots at their own game. Rather, the successful distilleries are trying to carve their own niche and, together, put English whisky on the map as a worthy product in its own right. One that is innovative, contemporary but, above all, of the highest possible quality.
