Healthy ingredients, easy recipes, fuss-free cleaning, you don't need to buy extra utensils, and basically everything is suitable for batch cooking. A little gem. i’m not someone who needs the food i make to be pretty. i’m just me—flinging ingredients into chipped bowls in my tiny kitchen and hoping it all tastes good. i can appreciate the pretty food of others in books and on internet, and i understand that visually appealing food sells more cookbooks than ‘real-life’ food made by people like me without fancy cameras, food stylists, a tableware budget, or even adequate lighting. Veganism is NOT a dietary preference; it is an ethical position that seeks to reduce harm as far as possible to animals. Preheat the oven to 200°C fan/220°C/ gas 7. Tip the gnocchi into a large bowl, then pour a kettleful of boiling water over it and leave to stand for 2 minutes before draining well. Give the coconut milk a good stir, then pour it over the beetroot and mix well. Return the roasting tin to the oven for 10 minutes.

So it’s almost unheard of for a cookbook (two by this author) radically to change the way I cook. But this and its sister book have done just that and for the better with less food waste, less energy and a wider range of foods getting eaten by Other Half. I liked this book and its recipes so much that I also bought the other books in the series. There are some similar meals, but overall I really like this set of books. this is not a monthly project, but a book i will dip into periodically, sharing my successes and failures as they occur. Meanwhile, mix the oil with the tamarind paste and sugar. Once the vegetables are cooked, toss with the dressing, then scatter over the peanuts, fresh coriander and the chaat masala and/or mango powder, if using. Serve with the yogurt, piled into flatbreads or naan.

I have found that the times are a little bit short, perhaps it’s my oven or personal preference? But I’m really pleased to have bought this book Learn the ins and outs of all of the most delicious Vegan meals in this recipe book full of 75 different tasty dishes! Has some minor issues as a self-published cookbook, but there are some good recipes in here for vegetarians or flexitarians who are looking to mix things up a bit. From flexitarians to families, this book is for anyone who wants to eat easy veg and plant-based meals using everyday ingredients and store cupboard staples. I love to cook as many friends and family will attest. I also like to read cookbooks. I rarely cook *from* them; the contents just marinate away in my head and eventually form themselves into dishes all of their own accord.I'm very into this book on many levels, but mostly because it is such an easy, fun and cheap way to eat more vegetables. Which we all need to do, for reasons of health and environment. Fabulous book with straight forward recipes: first half vegan, second half vegetarian (although, in my view, all the latter can easily be adapted for vegans); offering really tasty meals, ranging from super fast to slow cooked dishes. Best cookery book I’ve seen in years.

The ultimate vegetarian and vegan cook book. Seventy-five easy one-tin recipes: half vegan, half vegetarian, all delicious. After 20 minutes, stir through the Puy lentils, crème fraîche and another good scatter of sea salt, then top with the feta cheese and breadcrumbs. Drizzle with the olive oil, then return to the oven for a further 20–25 minutes, until golden brown on top. By far the best cookery book I have ever bought. This was a present for a friend as I already own a copy. My boys even eat cauliflower now - must be good. The only thing I would criticise is the amount of salt used. I always just halve it and it works out great. 10 minutes to prepare most of the dishes and 20 minutes to cook. What more can you ask. I love Rukmini Iyer's books.' Vegan recipes we love: Warming Sweet Potato and Mushroom Polenta with Tomatoes. Crispy Gnocchi with Mushrooms, Squash and Sage. Ik kook graag maar het moet makkelijk zijn, snel én met veel groenten. Ik heb dan ook zelf al de geneugten van alles in één pan in de oven ontdekt (rijst onderaan, groenten erop en vleesvervanger bovenaan). Maar dit boek tilt dat alles naar een veel hoger niveau. Hierin staan recepten die niet alleen lekker zijn maar er ook goed uitzien én die je aan bezoek kan voorschotelen, zonder schaamrood op je wangen (wat met mijn uitvindingen niet echt haalbaar is). Oh, ik moet mijn best doen om niet te beginnen kwijlen bij de cover (en foto’s binnenin) van dit geweldige boek. Really tasty, healthy recipes with a great variety of veg combinations I wouldn’t have thought of for myself. They’re easy to cook, the instructions are clear, they look fabulous when ready and there’s little washing up afterwards. I’ve used this book almost every day since buying it 2 months ago and don’t miss meat as the dishes are all substantial enough to feel satisfying, even the vegan ones. I’ve given copies of the book to my 3 kids

There are some good ideas in here, but also some really weird and off-putting flavour combinations, especially if like me you hate licorice as there's a lot of licorice flavours in this book (fennel, chicory, celeriac etc). Also radishes and cauliflower, both of which I find unpleasant. I found this author has very different tastebuds to me. I've never been alarmed by so many recipes in any other cookbook. The one with chicory, radish and orange sounds like my nightmare. And too much hot avocado! Yet, there is genuine inspiration in some of the tarts especially.

I bought because I now have a vegan in the family, and because I made a new year's resolution to try one new recipe a week to get out of my own cooking rut, but this book has earned its keep already. Tip the gnocchi into a roasting tin along with everything except the ricotta. Mix well – make sure you’ve used a tin big enough for everything to fit in one layer. Transfer to the oven and cook for 30 minutes, until the gnocchi is crisp and golden. Tip the whole aubergines, red peppers, vine tomatoes, onion, thyme, garlic, olive oil and 1 teaspoon of salt into a large roasting tin, then use your hands to coat everything really well in the oil and salt. I am not a Vegan or vegetarian but I do enjoy eating vegetables, I like to eat at least 1-2 vegetarian dishes every week, it helps my Diet, saves money but Most all it can be tasty. there’s no need for the sabotage, book! i was already at a disadvantage—we were never in competition, i promise you! i couldn’t even find cherry tomatoes on the vine at the one place i had time to shop for dinner-groceries! i live humbly in the shadow of your tiny tomatoes.
