Lime halves should be halved lengthwise. Carefully cut around the inside of each lime with a sharp knife, and then use a spoon to remove the flesh. Take the lime peel apart and get rid of the membrane inside. For the lime jelly, soak the gelatine sheets in cold water for 5 minutes. Put the lime juice, 60ml of water and the caster sugar into a saucepan and slowly bring almost to the boil, to dissolve the sugar. Remove from the heat. Squeeze the excess water from the gelatine sheets and add them to the pan. Stir to dissolve. Add the lime zest and colouring, stir, then transfer to a jug and leave to cool for 30 minutes. With all the flavours of Turkish delight, these fragrant Middle Eastern-style puddings make a light finish to an entertaining menu
