About this deal

An explorer and an author found a farm nestled between the sea, the rainforest and the mountains. It seemed perfect, for they had a vision to create different types of spirit - spirits of the land and close to nature. To make tea, steep 1 teabag in about 250ml hot water. let sit for about 10 mins for the flavours come through. Take out tea bag and let tea cool before using.⠀ Harriet loves the traditional English sloe gin style of liqueur. After much nagging to Quentin, he obliged and created Ink Sloe & Berry Gin. The final ingredient in Ink Sloe and Berry Gin is Australian rosella flowers. Growing wild on the fringes of tropical rainforest of northern Australia, rosellas are a type of hibiscus flower. Theyhave a vibrant colour and a crisp, tart flavour to balance the sweeter botanicals in Sloe & Berry. As Australia’s first agricultural rum distillery we are developing this style of rum with a farm to bottle™ philosophy, using sugar cane grown 100% on our farm.

The Distillery — Ink Gin

Pink Marmalade Gin is emphatically citrus, decidedly smooth and beautifully zesty. It balances organic botanicals, with a moment of colour-changing magic. The final ingredient is added in a post-distillation infusion. The specially prepared petals of the butterfly pea flower are steeped in the still for twenty-four hours to give Ink Gin its distinctive colour. The story of hops in beer is about as old and convoluted as that of juniper in spirits, and we just couldn’t resist adding our own chapter. Traditional small batch distillation meets modern and exciting flavours with the inclusion of 13 choice botanicals. These range from fiery pink peppercorns to soothing chamomile, and even salted grapefruit marmalade. When mixed with Fever-Tree Indian Tonic, it undergoes a natural colour change from cool blue to subtle rose pink.

The home of Ink Gin — Husk Farm Distillery

Ink Bitter Orange Gin started out as an idea to bring the sophistication of the bitter orange fruit into a spirit which was accessible, versatile and nostalgic. This is the quintessential drink of the summer throughout the British Isles – think picnics in the park, Wimbledon, and strawberries and cream. Lavender is a versatile and beautiful flower that has been used for thousands of years thanks to its antiseptic and anti-inflammatory properties, and works wonderfully well in this gin, providing a soothing aroma and a slightly sweet and floral taste. With countless medicinal and healing properties, lavender is used as a cure for insomnia, so this gin is perfect at the end of a hard day. This organic, small batch, Australian craft gin resulted from distiller Paul Messenger’s experimentations with an exotic flowering legume from Thailand known as the ‘Butterfly Pea’ (Clitoria ternatea) in 2012.

Paul wanted to make a gin. But being an unknown distiller clattering around a small farm shed in Northern NSW, he knew he had to do something truly different to make his gin stand out. Palate: Citrus sits at the core, with woody juniper following. Subtly floral at points, and a touch of sea breeze sneaks in later on. We had been thinking for a while that we’d love to have a gin in the Ink range that is bigger and bolder, with deeper base flavour notes perfectly suited to the negroni.
