Tinned pressed cod roes are a good substitute for fresh cod roe which is only available fresh in season [January to march - UK] The name comes from the Norse word for “wanderer” and reflects the 1,000-kilometer journey that the skrei takes between January and April every year. When the skrei arrive it’s a time for celebration. They’re caught by the millions and exported for their prized meat, liver, and, of course, cod roe. Put the flour onto a plate and coat each cod roe round lightly with it, then dip into the beaten egg, making sure they are coated around the sides.
