Technique tip: Scallions, celery, cilantro and chile can be combined a day ahead, stored in a large zippered bag and refrigerated. Dress before serving. Slice celery and scallions thinly on the bias for long elegant slices. Don't make too far in advance or the water will leach out and soften the celery tablespoons finely chopped fresh cilantro (leaves and tender stems) or chives, plus more for garnish I have to admit, on first glance the book is anything but Nothing Fancy. But, I rate cookbooks by how many recipes I copy to try later. I believe I would cook a good number of these. I think I have most items in my pantry, and I would estimate them to be reasonably simple to prepare.
