With all these madeleine pans out there, how will you ever decide? You could end up with a pan from any number of brands. Start with a simple silicone madeleine mold that makes perfect madeleines despite the cheap mold's price. They are light, moist, tender little cakes that have that classic 'hump' (or nipple!) that Madeleines are known for.
