Persie Gin is a renowned spirit crafted in the Scottish Highlands, notable for its distinctive aroma-forward character and a focus on achieving well-rounded, accessible flavours. Founded by Simon Fairclough, known as the ‘Gin Man of Scotland’, this distillery emanates a philosophy that nose, as well as taste, should drive the gin-drinking experience. It implies a rich indulgence for both seasoned gin enthusiasts and newcomers alike, providing an immersive sensory journey right from the first sniff to the lingering aftertaste. Green leaves and window box herbs greet the nose; there’s an underlying hint of spice and a vague similarity to those green herbal bubblebaths you indulge in at the end of a long, hard week.

An explosion of limes and blood oranges with piny notes on the nose. On the palate there is a sharp citrus cut-through with a long, zingy finish. Named after the indigenous bird that can only be found in the ancient forests of Scotland, Crossbill gin is one of the only gin distilleries to use 100 per cent Scottish juniper and rosehip, with the distillers claiming to have revived Scotland’s juniper production.Like the breed, this is spicy and lively on the palate with a gentle coating (made with nutmeg and cinnamon). Persie creates aromatic, distinctive gins from its distillery at the base of Glenshee. Owners of Persie Gin, Chrissie and Simon have focused their gin production on the adage that 75 per cent to 95 per cent of a gin’s flavour profile is based on smell, creating a Zesty Citrus Gin, a Herby & Aromatic one and their Sweety and Nutty Old Tom Gin. The dedicated tour, which lasts an hour and 15 minutes, lets visitors see the inner workings of the distillery as well as being given the chance to sample some of their wonderful, award-wining gin.

That's why Persie Distillery is worth a visit. We are a small, family-owned distillery just north of Blairgowrie in Highland Perthshire. The first spirit ran from Phil the Still (!) in March 2016, and the distillery opened to the public four months later. We now welcome visitors throughout the year. We’ve never before encountered a gin that captures and conveys the scent of fresh-from-the-tree nuts with such clarity. That sweet, slightly milky smell greets the nose instantly, joined by a faint hint of malt and an air of vanilla. It’s strange how the advice to drink eight glasses of water a day seems impossible to achieve – but six glasses of gin at a tasting? That goes down like a chubby kid on a see-saw.” Take a trip to Glenshee Like the breed, this is traditional, soft in the mouth and warming (made with juniper and eucalyptus).

Visitors can see the gin still, Big Don, and try some of the products available before ending with a gin and tonic in the tasting room. Drivers will be given a 5cl miniature to take away and enjoy later. What makes the gin spicy is the use of mace and cinnamon as dominant botanicals. The gentle finish is down to bay leaveThe gin is made using 12 botanicals including the distinctive Icelandic moss and sheep sorrel to make a rich earthy and floral gin. It’s a dry and zesty gin, and being from an island containing approximately 161 residents, there’s something especially unique about the product. It’s actually known to be ‘first legal spirit from an island rooted in centuries of illicit distilling’ too. This hour-long session includes sampling gins from the range with advise on how to serve them. The tasting also includes information on the creativity and innovation that has made Eden Mill one of Scotland's most popular names in gin.

Harris Gin is made using nine botanicals including locally-sourced, hand-dived sugar kelp (which gives the gin its coastal flavour) and produced in a small copper still – affectionately known as ‘The Dottach’. After distillation, each gin rests in steel tanks for a minimum of a week, before being reduced to bottling strength. Persie Herbal & Aromatic and Nutty Old Tom are ready to bottle within days, but Zesty Citrus is left to lie for another three weeks to keep louching to a minimum. Persie Zesty Citrus Gin to taste… It embodies a sweeter, somewhat earthy profile, offering a smooth, slightly sugared experience that diverges from the classic gin sharpness.

Dunnet Bay Distillery

Eden Mill is located just a couple of miles west of the famous home of golf, and is considered to be one of Scotland’s most unique distilleries in that it is also a brewery. Fans of both whisky and gin will enjoy this newly opened visitor experience at the Benromach Distillery in Speyside. It is infused with five Celtic botanicals (including Coul Blush Apple and Bog Myrtle), six traditional botanicals and Scottish spring water.
