About this deal

Line a cookie or baking sheet with parchment paper and place a vase upside down in the center of the sheet. Make sure the diameter of the vase or jar you use is smaller than the cake. Then place the cake on top. For this recipe, I’ve used wheat-based self-raising flour so it would not be gluten-free. I haven’t tested this recipe with gluten-free flour yet but you could give it a try if you want, let me know how you get on in the comments below.

I then added the caster sugar and this is the point where the mixture can split. I used the whisk attachment of my KitchenAid stand mixer and whisked for about 2 minutes until the sugar had dissolved. As you can see the mixture goes pale and creamy. The buttercream is regular vanilla buttercream with food coloring. Be sure to use a food coloring that's suitable for cake batters, buttercreams, icing, and icing. I recommend using gel or paste food coloring. If you have any specific concerns or questions please speak to a medical professional, A Mummy Too does not offer medical advice. What goes well with this Galaxy chocolate cake? As we’re using sunflower oil instead of butter to make this moist chocolate cake the batter might seem wetter than cakes you’ve made before. Don’t worry it will be quite wet at this stage, and given enough time in the oven the cake should bake to perfection. Have a look at the photos above, you’ll be able to see how liquid the cake mix looks before it's cooked. As this cake contains fresh cream for the filling it needs to be kept in the fridge. Transfer any leftover cake into a suitable size container and pop it in the fridge. How long does this Galaxy chocolate cake keep?

If you wanted a richer and more indulgent cupcake mix however – I one hundred percent recommend using my chocolate fudge cupcake recipe. They’re gooey, so fudgey, and purely epic. However, I understand that not everyone wants to go through that faff of the recipe, so I went for a basic on for these bad boys! Inactive - Do very little exercise, going for the occasional walk (moderate pace, low intensity). Spend majority of leisure time doing activities such as watching TV, playing computer games, on the internet, reading, cooking, driving, general household chores. Transfer half of the mixture into the prepared baking tin. Add two Galaxy Caramel bars on top of the mixture then gently spread over the remaining blondie batter. Use a large metal spoon to spread the mixture out and ensure it's even. Gone-off oil will smell rancid and may be discoloured and if this is the case it should be discarded safely at your local refuse collection center. Is this Galaxy chocolate cake suitable for vegetarians? Once the cakes are in the oven baking, wash and thoroughly dry the bowl and whisk attachment ready to make the cream filling.Use your free-standing mixer with the balloon whisk attachment to beat the cake batter. As you add the ingredients you might need to scrape the sides of the bowl with a spatula to make sure everything is mixing in well. If the oven is too hot the cakes will rise rapidly, and then collapse as they have not baked enough to hold their shape, and conversely if the oven isn’t hot enough the cakes won’t rise and will likely sink in the middle. Bake for about 30 minutes until firm and springy on top. Cool in the tin for 10 minutes, then remove from the tin to cool completely. Make the Galaxy ganache So this started out as my base blondie recipe, it's exactly the same recipe I used for my Mini Egg Blondies (except there's no mini eggs, obvs).

For teaspoon (tsp) and tablespoon (tbsp) measurements, please use measuring spoons* and not the type of spoons you eat with. Again this will ensure accuracy and provide the best results. Next, I added the vanilla extract and eggs. I used my stand mixer to whisk everything together for about 3 minutes. The blondie batter went almost mousse-like in texture and was very light. At this point, I very carefully folded in the flour by hand. When adding flour to cake, blondie or brownie batter I always stop mixing when I can no longer see white streaks of flour. This stops the texture from becoming heavy and dense.

Troubleshooting

Yes! For gluten free you can replace the self raising flour with a gluten free self raising flour blend. If you only have a gluten free plain flour blend, you will need to add baking powder. The general advice is to add 2 tsp baking powder per 200g flour, so for this recipe you'd need to add 1 + ½ teaspoons baking powder. You may also like to add ¼ tsp Xanthan Gum for better texture. For a dairy free version, use a dairy free baking spread and dairy free milk for the cupcakes and the buttercream. You will also need to use a dairy free alternative to Galaxy spread or Galaxy chocolate fore the buttercream, and decorate the cupcakes with a dairy free alternative to Galaxy. Do you need an electric mixer to make this recipe?

Finally, keep the oven door shut, the cakes need time to bake and if you open the door too early the temperature fluctuation in the oven will make the cakes sink. You can keep an eye on them through the oven door. How can I add/change the flavours in this Galaxy chocolate cake?

How to make Galaxy Chocolate Cupcakes

As I mentioned when I made my Malteser Teaser Cupcakes, there are so many chocolate bars being turned into spreads at the moment. So I feel it is only my duty to then turn these spreads into buttercream to top delicious cakes and cupcakes with! This time it's the turn ofGalaxy Chocolate Cupcakes. I've infused the sponge with Galaxy hot chocolate powder (which by the way is my favourite hot chocolate powder and you must give it a try as it's so creamy and rich for a powder drink.) Then I've made a buttercream using the Galaxy chocolate spread, and of course the decoration had to be in the form of Galaxy chocolate pieces for the ultimate Galaxy triple treat! Ingredient Tips & Equipment Information Add the vanilla extract to the bowl along with the eggs. Beat well for 3 minutes until light and fluffy.
