About this deal

To make the sauce: Heat the olive oil in a saucepan set over medium heat until shimmering. Stir in the garlic and pizza seasoning, cooking until fragrant, about 30 seconds. Add the tomatoes and sugar, bring to a simmer, and cook until the juices have reduced significantly and you have about 3 cups of sauce, about 20 minutes. Remove the sauce from the heat and set aside. Let’s start with the pan. Though it's traditional, you don’t need to go out and buy a Detroit-style pizza pan. When testing, we used a standard 13"-by-9" pan, and it still turned out delicious. After 30 minutes have passed, reach into the vessel and pull the dough up and into the center. Turn the vessel quarter turns and continue this pulling 8 to 10 times. Let the dough rest for another 30 minutes; then repeat the stretching and folding. After these two sets of stretches and folds, you should see a difference in the texture of the dough: it will be smoother, stronger, and more elastic.

Add Sauce: Use a small spoon to spread 2-3 lines of pizza sauce down the pan, over the cheese. Don’t cover all the cheese. It’s imperative to keep your pans clean. Fortunately, cleaning Authentic Detroit Style Pans is an easy process:

Hi Alexandra. I’ve cross-referenced four different authentic Detroit-style pan pizza recipes, and everybody says the cheese goes on first, followed by the toppings and finally the sauce. (I read above that you don’t like to do it that way, and instead add some sauce first. Did I read that right?)
