Macallan 37 yo 1937 (40%, Gordon & MacPhail for Pinerolo, Edwards & Edwards, Italy, sherry wood, +/-1974) - 201210

Strong oak. Dried fruit: raisins, apricots, mango perhaps? A mix of butterscotch and caramel, not much spice. The Macallan 12 Sherry Cask Nose The Macallan distillery uses smaller than average copper stills for the first distillation. The small size of the stills has two effects. First, it makes smaller batches which are easier to control and much more precise. Second, it allows greater interaction between the copper surface and the soon-to-be scotch. These interactions increase flavor development. Small Cuts Each bottle of The Macallan is carefully selected so that only the finest quality whisky is chosen to ensure the best single malt whisky is created. One of the finest in the industry, the “cut” or small portion that is selected is responsible for the full-bodied richness of The Macallan’s range of whiskies. This is why it is critical that each cut is chosen with care, as it is the basis of The Macallan’s quality whisky. Much stronger vanilla and some hazelnut, followed by nutmeg and cinnamon, intensely sweet caramel The Macallan 12 Triple Cask Nose with Water

Macallan ‘N°6’ (43%, OB, 1824 Series, Lalique crystal decanter, first fill Spanish oak sherry, +/-2014) - 040917

Macallan 13 yo 1995/2009 'Easter Elchies' (52.8%, OB, sherry hogshead, distillery only, cask #14016) - 140610 If any provision of these Terms is held invalid, the remainder of the Terms shall continue in full force and effect.Vanilla with slight orange peel and strong cantaloupe. The oak notes hit first, but hot chili pepper isn’t far behind. Just a hint of baking spices like nutmeg. Macallan 25 yo 1991/2016 (51.1%, Douglas Laing, Xtra Old Particular, refill hogshead, cask #11489, 231 bottles) - 080217 Thanks to the Scotch Whisky Association’s rules, there is a fairly uniform process for making scotch, blended or single malt. Of course, each distillery makes its own minor changes which sets them apart from everyone else. Malting If you are a whisky fan, you would know that only a select few Scotch whiskies is always held in high esteem. The Macallan falls into this category. Every year, over 700,000 bottles of whisky are sold globally. The brands bring about a sense of history, prestige and class. It is also synonymous with quality whisky, which is why its legacy has lasted for over a century! Macallan 50 yo 1926-1928/1983 'Anniversary Malt' (77°proof US, OB, Berman Imports Los Angeles, twist cap, 500 bottles, 750ml) - 270323

The Macallan distillery was founded in 1824 by Alexander Reid, a barley farmer and school teacher. Now owned by the Edrington Group, The Macallan prides itself on its Six Pillars, which include its curiously small stills, very narrow 'cut' of new make spirit and exceptional cask management. It is the most sought after whisky for collectors, regularly setting records at auctions all round the world.

Macallan has always adhered to the industry-leading vision of pursuing perfection and uncompromising spirit. My personal preference is The Macallan 12 Sherry Oak. It’s an exceedingly smooth and pleasant sip but that hint of hot sherry spice makes for a festive finish. Granted, I first drank this on Christmas Eve so the festive spark felt appropriate. And I added a bit of water to draw out more complex flavors. Macallan 20 yo 1989/2010 (50.5%, Cadenhead's, Authentic Collection, bourbon barrel, 169 bottles) - 261110 Các sản phẩm gồm: Macallan Triple Cask Matured 12, Macallan Triple Cask Matured 15, Macallan Triple Cask Matured 18 The wash is transferred to copper pot stills and heated to allow the alcohol to separate as vapor. Once this vapor has been fully separated and cooled, the ABV has increased, but it is still called “low-wine.”

Once the whisky has aged for a set amount of time, the master distiller tastes all barrels and determines which are fit for aging. These barrels are blended together and then either aged a little longer or bottled for production. The Macallan: Speyside Scotch or Highland Scotch? The Macallan AERA is a single malt whisky inspired by important milestones in life and specially created to celebrate and commemorate these moments. Life is a journey of many different processes, and the journey of the oak cask gives whisky its unique flavour. Whisky is any liquor made from distilled grains. These grains could include barley, wheat, corn, or rye. The distilled liquor is then aged, usually in wood, for a number of years to develop more flavor and color. The Macallan whisky colours are all-natural, with no artificial colouring added. This speaks to the Master Whisky Maker skills as to achieve consistency of natural colour from bottling to bottling is no easy task. Harvested barley is soaked in water to germinate. The barley is dried overheat to halt germination in a process called “malting.” The malted barley is then ground in a grist mill and combined with warm water to form “wort.” Barley’s natural enzymes begin early conversion of sugar into alcohol. Competition History

The Macallan, like a keeper of time and which houses the rarest original whiskies of all vintages in sherry casks, has selected the best oak casks to produce The Macallan AERA, a highly complex classic Macallan style of dried fruit flavours and aromas, with sweet hints of chocolate and honey, to celebrate and commemorate every precious moment in life. Strong creamy melon and vanilla hints. Orange oil wafts from the glass. Chili pepper hits later with hints of cinnamon and other spices The Macallan 12 Double Oak Palate The magic starts in The Macallan distillery. Most of The Macallan’s best whisky is matured in oak sherry casks that are brought to the distillery from Jerez de la Frontera in Spain. In 2004, a new product range was introduced by The Macallan as the Fine Oak series. In this series, the whisky is mellowed in bourbon oak casks and sherry casks. However, come 2018, the Fine Oak series was renamed to become the Triple Cask Matured range.
