First, it makes smaller batches which are easier to control and much more precise. Second, it allows greater interaction between the copper surface and the soon-to-be scotch. These interactions increase flavor development. Small Cuts Each bottle of The Macallan is carefully selected so that only the finest quality whisky is chosen to ensure the best single malt whisky is created. It’s an exceedingly smooth and pleasant sip but that hint of hot sherry spice makes for a festive finish. Granted, I first drank this on Christmas Eve so the festive spark felt appropriate. And I added a bit of water to draw out more complex flavors. The Macallan, like a keeper of time and which houses the rarest original whiskies of all vintages in sherry casks, has selected the best oak casks to produce The Macallan AERA, a highly complex classic Macallan style of dried fruit flavours and aromas, with sweet hints of chocolate and honey, to celebrate and commemorate every precious moment in life. Chili pepper hits later with hints of cinnamon and other spices The Macallan 12 Double Oak Palate The magic starts in The Macallan distillery. Most of The Macallan’s best whisky is matured in oak sherry casks that are brought to the distillery from Jerez de la Frontera in Spain. In 2004, a new product range was introduced by The Macallan as the Fine Oak series. In this series, the whisky is mellowed in bourbon oak casks and sherry casks. However, come 2018, the Fine Oak series was renamed to become the Triple Cask Matured range.
