Also simply referred to as “dry gin,” this is the most traditional and most popular type of gin⁠—and, despite its name, doesn’t actually have to be produced in England. It generally does, however, have to be made according to strict purity standards, which have origins in the 18th century and are meant to ensure the absence of toxic distillation byproducts. If you look at the list of botanicals in Bombay Sapphireyou will notice a few differences from other London dry gins. Grains of paradise, almond, and cubeb berries are not your average gin ingredients and they help this bottle stand apart from the crowd. We think this bottle is ridiculously cool … we hope we look as suave as the woman on the label after a few gins! But others see something we laymen and women wouldn’t normally find in the microscope lens: they see beauty. London Dry Gin: The old guard brands mostly distill London Dry-style gin in the UK, although it does not actually have a geographical indicator. The main rules of this designation are that juniper must be the dominant flavor (as it is for all gin) and botanicals must flavor the gin during distillation, with no flavor or color added afterwards. Brands like Beefeater and Tanqueray are classics for a reason, but the world of gin has expanded enormously over the past 20 years as new distilleries tinker with the formula. Bols 100% Malt Spirit takes the neutral grain spirits out of the equation. The brand calls it "genever in its purest form," created from a distillate of corn, rye, and wheat that is fermented for longer than usual and married with juniper berries. Its taste is that of sweet grass with fruits and juniper.As the only regionally-restricted type of gin, Plymouth gin uses slightly more botanicals than traditional London dry gins, giving it a sweeter, earthier taste. This gin must be made in Plymouth, England, but only one distillery and brand remains in the Plymouth region⁠—the aptly named Plymouth Gin. Fun fact: the Monkey on the label is called Max, and whilst living in Berlin Zoo in post WW2 Germany Technically, one could make gin in a matter of hours, but Blue Bottle settles in stainless steel for three weeks before bottling. According to Matt, “There’s some alchemy in storing the gin that I don’t completely understand. The flavours blend and develop much better in those tanks, not unlike a stew which usually tastes better the day after it’s made.” Aviation's choice of a rye base gives this gin a creamier mouthfeel than most gins. It is a gin that you can enjoy chilled on its own, which is great news for super dry martini fans. Aviation is produced in Portland, Oregon, by House Spirits Distillery. It is distilled from neutral grain spirit with 100 percent rye base, an unusual beginning in the gin market. It's flavored with juniper, anise seed, Elettaria cardamom, coriander, lavender, sweet orange peel, and sarsaparilla. It, too, is slightly overproofed, bottled at 42 percent ABV (84 proof), so it's not as delicate as it's often made out to be.

Gin (a.k.a. “Dutch Courage”) is arguably one of the most versatile liquors out there. It's usually made from a minimum of 10 botanical ingredients, the most common of which is juniper berries. (Thanks to this antioxidant-rich "super fruit," gin has long been surrounded by an aura of health—in the 16th century, it was even used to treat stomach aches and anxiety.) The botanicals set out on their voyage by macerating in a neutral grain spirit, according to maceration magic. A symphony of flavours is created during this infusion, which becomes the core of Blue Bottle Gin. Today, drinkers can enjoy the diversity of gin.Unlike vodka, each bottle of gin is truly unique. The majority feature some degree of the pine flavor that comes from juniper, which is gin's signature ingredient, yet no two bottles have the same combination of botanicals. The essence of each ingredient is carefully removed and distilled into liquid perfection as part of the laborious distillation process that transforms it from components to glass.

The best part: This small-batch gin is consciously crafted. Gray Whale supports the conservation of our oceans through Oceana, and they have also partnered with 1% for the Planet. One percent of all Gray Whale sales go to environmental causes. The brand is named after George Chinnery, the English painter, who began his career in Dublin, before travelling to China. The bottle is inspired by these two parts of his career – Georgian Dublin and Imperial China. stationed in West Berlin. Collins later founded Schwarzwald Dry Gin which became Monkey 47 Gin in 2006! This is a double-distilled gin produced in a two-stage distillate . Juniper, coriander, angelica, licorice root, cassia bark, Florentine iris, and lime peel are introduced in the first distillation. Bitter orange peel, lemon peel, and lime peel in the second. It is finished with Icelandic glacial water and bottled at a standard 40 percent ABV (80 proof).

Like many other brands, Bols has expanded their genever selection. Beyond the original, you can find barrel-aged bottles, which are rested in French Limousin oak casks for 18 months. Once a one-bottle brand, Aviation has expanded its portfolio to include Aviation Old Tom. It's the distillery's take on an old, sweeter style of gin, but they don't add sugars or flavorings, which is customary. Instead, they rely on whiskey barrel aging to bring out an Old Tom taste and accentuate the original Aviation's natural sweetness. You will find the gin to be very aromatic and filled with rich flavors, making it a true delight for any gin lover. Whereas Matt once found beauty in flies and blood cells, he found his passion in brewing. After leaving the world of academia behind and completing a Masters degree in Brewing and Distilling at Heriot Watt University in Edinburgh, he cut his teeth Down Under at Australia’s second largest brewer, Lion Nathan, where he helped, amongst other tasks, to develop new products.
