About this deal

It may not be reproduced in any way whatsoever without the prior consent of Waitrose Limited nor without due acknowledgement. We can help with that by supplying you with your favourite magazines - you could be reading Chat or Heat, Prima or Marie Claire with your feet up having a lovely cup of Twinings English Breakfast Tea. The rule of thumb when it comes to melting cheese for a sauce is to always melt it at the lowest heat possible because, if you use high heat to melt cheese, you risk losing the moisture and fat in the cheese. Continue to heat an acid-set cheese, and its proteins will get closer and closer together and increasingly more water will be cooked off, but without that calcium holding everything together, you're not going to get any melting action. Adding acid, like the tartaric acid you'll find in a tart white wine, can also help prevent the cheese's casein proteins from clumping together and turning stringy, like in a classic fondue (our recipe uses a touch of starch for further protection from breaking).

These are the curds responsible for the vast majority of cheeses—the rest is a matter of aging, storage conditions, and the presence or addition of live cultures that help develop flavor and texture traits. Cheeses that are made for melting in grilled cheese and quesadillas include Cheddar, American, Swiss and Cabot’s creamy Monterey Jack. For extra smooth results - and to add a little flavor boost to your cheese - stir in a little wine or beer as it melts. You’ll want each batch of cheese to be completely melted into the butter before putting in the next addition. And yet other cheeses reach a whole other level of molten deliciousness, heightening pasta dishes, omelets, casseroles, and so many other favorites. For the ultimate flavor, look for balls of fresh mozzarella (as opposed to the low-moisture kind that comes in blocks, meant for grating), ideally packed in water, though plastic-wrapped is fine. In the event of any safety concerns or for any other information about a product please carefully read any instructions provided on the label or packaging and contact the manufacturer. First and foremost, the balance of water and fat has to be more or less maintained—otherwise the fat molecules will slip free and draw together. If you did skip the second coating, which I did on my first batch, you may find that the cheese will start to escape into the hot oil and you will then be left with a mess in the pan. This type of pan will keep stray, sticky strands of cheese from sticking to the sides and make it less likely for your cheese to burn.
