Continue as before with the second ginger bag and the second batch; remove ginger just before potting. Its heavy bottom dissipates heat for an even boil, and the wide, deep sides ensure an efficient and even evaporation as well as preventing too many hot splutters of boiling preserve. Removing the need for you to core, peel or slice your oranges, the Home Cook Prepared Seville Oranges make it quick and simple to make your own orange marmalade without any of the hassle. Thin, medium or thick-cut peel is really a matter of preference but, whatever you choose, stick with it.It's all about evaporation - the sloping sides and wide top help to drive off liquid quickly, so your preserve can reach the perfect consistency without overcooking. Just wash and dry them before you freeze them, use them from frozen and increase the boiling time until they’re cooked through. Our range also includes Chocolate Fudge Brownie Mix, Lemon Drizzle Cake Mix, Pancake Mix and much more! I tend not to fill my jars when the jam is absolutely scalding to minimise the risk of the the peel sinking to the bottom (it shouldn't anyway if the jam is properly set) but maybe I should for longevity. The tin will collect any drips – and there are sure to be some, no matter how carefully you try to fill the jars.

If yours seems to be taking a while don’t worry, it can take anything from 10 mins to 45 mins for marmalade to reach setting point, depending on your oranges. Picked some elderberries earlier so while the marmalade is cooking I will look for a recipe for them.

Our Lemon Drizzle Cake mix is the ideal cupboard staple and perfect when you’ve only a small bit of time to whip up something sweet. Even if you have a sugar thermometer (look for 105C or where it says ‘jam’), I’d still recommend the saucer test. I’d got out of the habit of making it but she died just after Christmas so I wanted to make it in memory of those companionable times.

Seville oranges are in season from the end of December to the middle of February, but they can be frozen whole and enjoyed year-round.Purists would probably go for waxed discs, cellophane tops, and rubber bands, but I prefer the French/Italian jars with either metal lids or rubber seals and a wire clamp. Warm your jars if they’re not already sitting in the dishwasher and ladle or pour the marmalade into them (I find a small jug is easiest for this). Whilst hot, place a waxed disk (shiny side down) on the top of each jar and cover with cellophane when cold.
