Lyophilisation, a process of drying by freezing, preserves the natural flavour, aroma and colour of the cherry, as well as all its nutritional values, while extending its life. Sour cherries are diuretic, so they are recommended as an aid in the treatment of urinary tract diseases: cystitis or kidney stones.

Since the water content is being removed during the freeze-drying process, microorganisms and enzymes action are inhibited. The product is free from added sugar, sulphur, preservatives, artificial colours or flavourings, gluten-free, raw, vegan, GMO-free and is not irradiated. This minimises the carbon footprint, in effect making Vivarini products even more environmentally friendly.Due to the nature of the product, there can be slight differences between the seasons, which is not a qualitative defect of the product.
