cup of tigernut flour contains 14 grams of carbohydrate, and 5 grams of that is sugar; meaning it is naturally sweet. This is great for baking because you don’t need to add as much sugar to sweeten tigernut desserts. Has a somewhat grainy texture similar to almond flour. When combined with tapioca flour, you get a fluffy consistency, similar to regular whole wheat or all-purpose flour. I am a fool for just about any ginger or gingerbread type of baked goods all year round, but especially Ince the winter holidays roll around.

In a separate bowl, whisk together the wet ingredients. This includes the eggs, maple syrup, avocado oil, coconut milk and vanilla. This nut free Paleo bread is best stored in the fridge. Slice the bread and keep it in an air-tight container for up to one week. I have only tested this recipe using tapioca flour. However, an equal amount of potato starch or arrowroot should work well as substitutes. If you are ok with cornstarch, that should work, too. Freshly ground tigernut flour will not stay fresh for long and must be kept in an air-tight container in a cool, dry place and used within 3 days. I have left it overnight in the oven at around 100 degrees but it seems to only dry out the top layer of it and some still starts to smell after a couple of days. What other suggestions do you have for properly drying the flour before storing it?
