Description

First a secret spice recipe including orange and vanilla is distilled in a flame-fired Cornish copper pot still, then blended with Jamaican pot still rum and a light, column-still rum from the Dominican Republic. Twin Fin is then finished with a touch of Pedro Ximenez sherry for natural balance and rested over charred oak chips for a rich golden warmth. It may not have the depth and character of some of the more “serious” varieties of flavored and spiced rums, but coconut rum holds a revered place in the pantheon of fruity drinks. It's not highly alcoholic, and diluting it even further with soda or fruit juice means it's great for daytime sipping. 4. Can you drink coconut rum by itself? Place on a plate or sheet pan to dry. Put in the freezer for at least an hour or until firm and cold.

Place the lychees in a bowl and pour the maraschino cherry syrup over them. Let sit for about 10 minutes or until the lychees look “bloodshot.”

All you need for this recipe is a working blender, a sieve, glasses, crushed ice or ice cubes and a few extra ingredients. Fancy colourful straws and umbrellas are optional but recommended. I also use amaretto-Mai Tai’s traditionally have a creamy almondy flavor, as well as Cointreau. You can use different, less expensive, orange liquors. Just make sure it isn’t an orange brandy blend like Grand Marnier; we want just the sweet orange flavor of Cointreau.
