I always try to have a purpose for making something on my list, and I haven’t quite had the opportunity for these guys until now.

They're wonderful eating as-is but even better when made into smores, which only take about 15 seconds to complete in the microwave. In a large bowl, mix together the graham flour, all purpose flour, brown sugar, baking powder, and baking soda.Within just a few hours, most of us had the hospital floor plan memorized… Or at least the nearest restrooms! There’s likely a way to turn them into chocolate graham crackers by replacing some of the all-purpose flour with cocoa powder, but for now, I’ll happily spread Nutella or Homemade Chocolate Peanut Butter on them when I want to get my chocolate fix on.

While the first tray bakes, keeping the second tray in the fridge so the dough stays cool will prevent spreading. Cut the dough into a grid of 1 1/2-inch x 2 1/2-inch rectangular crackers, puncturing each cracker with the tine of a fork to make three rows of dots in each cracker. I HIGHLY recommend fully freezing this dough before baking as it leads to a much better chew and texture. It’s nice to have that option when you get to the end of your dough and have that weird amount left that isn’t enough to make another cookie but too much to feel like you might regret it later.

You want them to be as close to a powdered state as possible since we're swapping them in for part of your flour.

Remove from oven and place the second graham cracker on top of the marshmallows, pushing down on the graham cracker. They didn’t last 2 hours this last time I made them let alone the 3 weeks they could last at room temp. Hi Amy, I tried the recipe several times but although we love the taste, the crackers always end up so hard! I placed two large pieces of plasticwrap over the dough before rolling so it didn’t stick to the rolling pin and so I didn’t have to use additional flour, which dries it out.
