A bottle of whiskey for Father’s Day is a gift as old as time, it should tell a story, evoke a memory, and offer a shared moment to reconnect with your dad over a delicious dram. I’ve got a bit of a soft spot for Bushmills since James Joyce mentions it by name in Ulysses. I’m a fan of everything Joyce wrote, so my scoring may not be purely objective.

Nose: An open fruit basket from the off, with a sprinkle of roses on top just for good measure. A few strands of liquorice can be found woven in between the pears, grapes, peaches and bananas, all of which are giving off an intense aroma as they ferment in the sun. Some honey is drizzled on top just to douse the resultant smoke, leaving us to enjoy a densely sweet nose of sublimely fortified fruit. 2.5 All in all, it is better then the regular bush. But not by much. The nose is what impresses me the most. It's got something Clynelish about it. Which, to me is quite good. Some diageo connection there? It's a great introduction to Bushmills flavours and is quite light when mixed. Amber gold in colour, the use of bourbon-seasoned barrels in finishing this whiskey provides a lovely compliment and lessens the intensity of what are very strong flavours.My dad, John, preferred his drink straight and complimented the smoothness as well as the slightly sweet aroma, but not too sweet taste. My partner Mark also complimented the drink for its "smoothness", and added that upon opening the premium-looking bottle the smell was incredibly inviting.

On the nose, it's apple. Baked apple, fresh apple, calvados. Some orange peel. I also get quite bit from the sherry cask: chocolate, ripened grapes, wood. I'm quite impressed so far. On the palate, the initial hit is quite balanced: neither too sweet, nor too dry. But then, it starts to develop. You get the sweetness of malt and corn, that turns into something like milk chocolate, then strawberry, then classic malt. Finally we get the wood notes of spices and a touch of corn and flowers. Bushmills 10 is where Bushmills really starts getting good and that triple distilled Irish single malt gets a chance to shine. From the complex and aromatic nose to the warm fruity palate it’s wonderful whiskey and I can’t recommend it enough. It’s quality drams like this that make me wonder why so many folks have such a bias against Irish Whiskey. Sure some of the blends are crap, but so are some Scottish blends. The single malts and single post sills though, those can be very nice indeed.
